Related Rules
If an ability would produce one or more mana of an undefined type, it produces no mana instead.
Some abilities produce mana based on the type of mana another permanent or permanents “could produce.” The type of mana a permanent could produce at any time includes any type of mana that an ability of that permanent would produce if the ability were to resolve at that time, taking into account any applicable replacement effects in any possible order. Ignore whether any costs of the ability could or could not be paid. If that permanent wouldn’t produce any mana under these conditions, or no type of mana can be defined this way, there’s no type of mana it could produce.
To “tap [a permanent] for mana” is to activate a mana ability of that permanent that includes the {T} symbol in its activation cost. See rule 605, “Mana Abilities.”
An ability that triggers whenever a permanent “is tapped for mana” or is tapped for mana of a specified type triggers whenever such a mana ability resolves and produces mana or the specified type of mana.
A replacement effect that applies if a permanent “is tapped for mana” or tapped for mana of a specific type and/or amount modifies the mana production event while such an ability is resolving and producing mana or the specified type and/or amount of mana.
If an object’s enters-the-battlefield triggered ability or replacement effect refers to X, and the spell that became that object as it resolved had a value of X chosen for any of its costs, the value of X for that ability is the same as the value of X for that spell, although the value of X for that permanent is 0. This is an exception to rule 107.3i.
The tap symbol is {T}. The tap symbol in an activation cost means “Tap this permanent.” A permanent that’s already tapped can’t be tapped again to pay the cost. A creature’s activated ability with the tap symbol in its activation cost can’t be activated unless the creature has been under its controller’s control continuously since their most recent turn began. See rule 302.6.
The untap symbol is {Q}. The untap symbol in an activation cost means “Untap this permanent.” A permanent that’s already untapped can’t be untapped again to pay the cost. A creature’s activated ability with the untap symbol in its activation cost can’t be activated unless the creature has been under its controller’s control continuously since their most recent turn began. See rule 302.6.
Rulings
If the chosen creature is copying something else (for example, if the chosen creature is another Gigantoplasm), then Gigantoplasm enters the battlefield as whatever the chosen creature was copying (plus any abilities it gained as part of the copy process, if applicable).
The activated ability Gigantoplasm gives itself becomes part of its copiable values. Unless the ability is overwritten by another copy effect, a creature that's a copy of Gigantoplasm will have that ability.
If Gigantoplasm somehow enters the battlefield at the same time as another creature, it can't become a copy of that creature. You may choose only a creature that's already on the battlefield.
You can choose not to copy anything. In that case, Gigantoplasm enters the battlefield as a 0/0 Shapeshifter creature, and is probably put into the graveyard immediately.
If Gigantoplasm isn't a creature (perhaps because it copied a land that had temporarily become a creature), you can still activate the ability "{X}: This creature has base power and toughness X/X." However, this ability won't have any effect, and it won't turn Gigantoplasm into a creature.
Effects that modify Gigantoplasm's power and/or toughness, such as the effect of Giant Growth or Glorious Anthem, will apply to Gigantoplasm no matter when they started applying. The same is true for counters that affect its power and/or toughness and effects that switch its power and toughness.
If the chosen creature has {X} in its mana cost, X is 0. The ability that Gigantoplasm gives itself doesn't affect an {X} in its mana cost.
Gigantoplasm copies exactly what was printed on the original creature and nothing more (unless that creature is copying something else or is a token; see below). It doesn't copy whether that creature is tapped or untapped, whether it has any counters on it or Auras attached to it, or any non-copy effects that have changed its power, toughness, types, color, etc.
The activated ability overwrites all previous effects that set Gigantoplasm's base power and/or toughness to specific values. Other effects that set its base power and/or toughness that start to apply after the ability resolves (including ones created by subsequent activations of the ability) will overwrite the effect of the ability.
However, the effect of that ability isn't copiable. That is, if Gigantoplasm is a copy of a creature with base power and toughness 2/2 and you activate its ability making it a 4/4 creature, another creature that becomes a copy of Gigantoplasm will have base power and toughness 2/2.
Any enters-the-battlefield abilities of the copied creature will trigger when Gigantoplasm enters the battlefield. Any "as [this creature] enters the battlefield" or "[this creature] enters the battlefield with" abilities of the chosen creature will also work.
If the chosen creature is a token, Gigantoplasm copies the original characteristics of that token as stated by the effect that created the token. Gigantoplasm isn't a token, even if it's copying one.
The activated ability that Gigantoplasm gives itself doesn't have a duration. It lasts until Gigantoplasm leaves the battlefield or another effect overwrites it (for example, if you activate the ability again once you have more mana available). Each time the ability resolves, it will overwrite any previous effects that set its power and toughness, including previous activations of the ability. Effects that otherwise modify Gigantoplasm's power and/or toughness, including +1/+1 counters, will still apply no matter when they took effect.
